Lemon Cheese-cakes

½ lb butter
1 lb. sugar
6 eggs
2 lemons (the rind of) &
the juice of three

Put all the ingredients into a stew pan
grating the lemon rind
& straining the juice.
Keep stirring the mixture
until the sugar is dissolved &
it begins to thicken.
When of the consistency of honey
it is done.
