Allow one oz of finely grated cheese
to one well beaten egg
& a tablespoon of cream.
Mix over the fire
till like a thick custard.
have ready some neat little rounds of
bread fried in butter &
thinly spread with anchovy paste
put a small quantity of the custard in each –
stone some French olives –
place one in the centre of each round.
Serve hot on a napkin
The rounds of bread are about the size & thickness of a penny.
